Chicken Pizza Bake

Pizza is one of my favorite foods and if I could eat it every night of the week, I probably would! However, that likely would not be my smartest move.


Imagine my hapiness when I stumbled upon Aubrey Howe over @kalekouture and her recipe for Pizza Chicken Casserole! Maybe pizza is possible every single day afterall!


I surveyed the fridge and purchased all the ingredients I was missing before setting out to create her masterpiece.


Once I had my chicken baking, I turned my attention to making the crust of the pizza.

About 5 minutes in, I knew I was going to have to improvise.... my gnocchi had probably been in the freezer a smidge too long and was not cooking up like it should have. Insert Chicken Pizza Bake!





I glanced in the fridge and saw liquid egg whites. I grabbed them and poured a layer into the bottom of my Our Place Always Pan and let them cook. Once the edges began to lift, I flipped the egg white over, doing my best to maintain the shape of the pan (it looked like a large egg white pancake). My thought process was that I would layer the egg whites at the bottom of the dish and then build the pizza on top!





And it worked like a charm! I made about 3 egg white 'pancakes' and arranged them so that they covered the bottom of my 8"x8" pyrex.




After the chicken was done baking, I layered it ontop of the egg whites, followed by pizza sauce, and cheese, then topped it all off with turkey pepperoni. And boom! Chicken Pizza Bake was born!





As I have mentioned before, Nick and I make sure that the LPs eat a little of what we are eating and it was a hit with them too! I love having multiple recipes that they enjoy as well!





Without further ado, here is the recipe!



Chicken Pizza Bake


Ingredients:

1 lb. raw chicken tenders

2 tbsp. pizza seasoning, divided

1 cup liquid egg whites

3/4 cup pizza sauce (or more to taste but this covered the dish well)

1 cup low moisture, shredded mozzarella (Ff) cheese

2 ounces of turkey pepperoni

Salt and pepper to taste


Directions

  1. Preheat oven to 400 degrees

  2. Cut chicken into bite sized pieces and place in a glass dish. Sprinkle with pizza seasoning.

  3. Bake chicken for 20 minutes or until chicken reaches 165 degrees

  4. While the chicken is cooking, create your egg white pancakes. Pour liquid egg whites onto a skillet heated on medium/high heat. Once the edges begin to lift ( about 1-2 minutes), flip egg whites. Place in a layer on the bottom of an 8"x8" pyrex sprayed with cooking spray.

  5. Sprinkle remaining pizza seasoning + salt and pepper on top of the egg whites.

  6. Layer cooked chicken on top of egg white "crust"

  7. Cover with pizza sauce and cheese

  8. Add turkey pepperoni

  9. Place dish in oven at 250 degrees for 15-20 minutes or until cheese is melted and pepperonis are crispy

  10. ENJOY!!!!
